Ingredients

  • 1.5 cups dry/uncooked black eyed peas
  • 2 really big tomatoes (2.5 cups quartered – of an 8 oz cup)
  • 1 small onion (3/4 cup quartered) –
  • sea salt to sprinkle on the tomatoes and onion while roasting
  • freshly ground black pepper
  • some olive oil to drizzle the tomatoes with
  • 1 tablespoon chopped garlic cloves
  • 1.5 tablespoon ghee /or oil
  • some red crushed pepper
  • a generous pinch of hing/asafoedtida
  • 1/2 teaspoon cumin seeds
  • 1 green hot pepper, like Thai bird
  • 1/4 teaspoon turmeric powder
  • salt to taste
  • a tiny bit of sugar if you need
  • 1/2 tablespoon julienned ginger
  • fresh herbs of your choice
