A classic mustard potato salad, bursting with amazing flavors, and perfect for serving up at a backyard BBQ!
Oh man, you guys, summer is going to be here before we even blink, and while in so many ways I am ready, ready, ready, in other ways I am just not. So I have to tell you what happened. Being a food blogger, one of the things I really love is attending blogging conferences. They are a chance to get together with other bloggers, learn, network, and have fun.
I have some blogging idols, and several of them teamed up and are putting on a conference at the end of May. So of course, I had to go to it. So without even looking at the dates or anything else, I booked it. Bought. Paid for. And the works. Then I figured I better find sitters and the like, so I looked at the dates, and guess what?
- 6 Russet potatoes, peeled and diced into 1½ centimeter cubes
- 4 eggs, hard boiled
- ½ cup sweet onion, finely diced
- ¼ cup sweet relish
- Salt and pepper to taste
- ½ cup mayo
- 1 Tbs Heinz Yellow Mustard
- 1 Tbs Sweet Pickle Juice
- 1 tsp granulated sugar
- 2 green onions
