Don't get me wrong, I LOVE hot cereal (especially now as I can tolerate GF oats, and quinoa cereal - YUM!).  I was just getting a little tired of having hot cereal for breakfast, so what's a gal to...

Ingredients

  • 2 Cups GF oat flour (don’t have oat flour on hand but have GF oats?!  Add 2 1/4 Cups of oats to your food processor or high speed blender and zap it until the oats turn into a fine flour!)
  • 1/4 Cup firm coconut oil
  • 1/4 Cup maple syrup
  • 3 ripe bananas
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons xanthan gum OR ground chia seeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Optional add-ins: 1/2 Cup chocolate chips and/or nuts of choice (walnuts would be a delish addition!), top with nut butter of choice
  • Chocolate Sauce Drizzle: 1 Cup non-dairy milk (I had hemp milk on hand) 1/2 Cup dark cocoa powder 3-5 Tablespoons maple syrup (depends on how sweet you’d like it!) Pinch of salt
