Cinnamon Vanilla Coconut Peanut Butter and Balls

A variation on Gina's Peanut Butter Chocolate Chip No Bake Balls I rarely have flaxseeds on hand anymore because I like chia seeds better so I used ground chia in this recipe. You can grind your own chia seeds (in a coffee grinder) or buy powdered chia from a health foods store. You could also use whole chia seeds if you're okay with the crunchy texture they will give the balls.

Ingredients

  • 1 cup old fashioned oats
  • ½ cup peanut butter
  • ¼ cup unsweetened, dried coconut
  • ¼ cup vegan chocolate chips
  • 3 Tablespoons maple syrup
  • 1 Tablespoons agave nectar
  • 2 Tablespoons ground chia seeds
  • 1 teaspoon vanilla
  • pinch of cinnamon
  • pinch of sea salt
