And guess what? I had pumpkin pie overnight oats for breakfast (again) with pumpkin spice granola – which is probably some of the best granola I’ve ever had!
This breakfast is so easy and tasty – I just can’t help myself but to have it all the time. Plus, the best part about overnight oats is that you actually don’t have to let them soak up the liquid overnight. You can let them sit for as little as 1-2 hours and they’ll still be ready to eat. For instance, this morning I was in a rush (I woke up later than usual and had physical therapy before work) so I threw together a batch of pumpkin overnight oats and tossed them on the fridge. After my appointment I ran by the house, picked them up and headed in to work.
