Juicy ripe peaches that are halved, roasted, then topped with tangy soft goat cheese, perfectly drippy honey and crunchy roasted hazelnuts.
Two nights ago, Adam and I were eating dinner at a lovely little French place downtown with some visiting friends. One of the appetizers on the menu was a grilled peach salad topped with goat cheese and even though we didn’t end up ordering it (went the traditional cheese board and grilled calamari salad route instead), the idea sparked my interest. Peaches are my very favorite summer fruit and goat cheese…? Well, we all know about goat cheese.
