One Pot Cheesy Mexican Pasta

As y’all know, I am in LOVE with one pot meals. They are so easy, convenient, and most of the time delicious. I picked up a couple cans of RO*TEL last week, and I knew right away I wanted to make a delicious One Pot Cheesy Mexican Pasta.

You can find RO*TEL in the canned tomatoes aisle in Walmart. I opted for the Mild with Green Chilies – yum! I also stocked up on some fresh produce, which Walmart also carries. Peppers and onions were really a big hit in this recipe!


  • 1 pound pasta noodles (I liked shells for this recipe)
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 cup frozen corn
  • 1 red onion, sliced
  • 1 packet taco seasoning
  • 2 10 ounce cans RO*TEL with Green Chilies (do not strain)
  • 4 1/2 cups water
  • 1 TBS olive oil
  • 1/2 tsp red pepper flakes
  • 1 can black beans, drained and rinsed (14 ounces)
  • juice from 1 lime
  • 1 cup colby jack cheese, shredded
  • 3 green onions, chopped
