  • 1/2 pound unsalted butter, room temperature
  • 2 1/2 cups granulated sugar
  • 4 eggs
  • 4 lemons, zested and juiced
  • 2 3/4 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup milk (I like some fat in mine…but you can go nonfat if you’d like)
  • 1 tablespoon vinegar
  • 1 1/2 teaspoon vanilla extract
