Southwestern Loaded Baked Potatoes Recipe

Crispy oven baked potatoes loaded with ground turkey, black beans, corn, tomatoes and cheese.

Ingredients

  • 4 tablespoons olive oil, divided
  • 6 to 8 Russet Potatoes, washed, scrubbed and dried
  • salt, to taste
  • ½-pound lean ground turkey
  • salt and fresh ground pepper, to taste
  • 1 yellow onion, sliced
  • 1 garlic clove, finely chopped
  • 1 can (10-ounces) Diced Tomatoes & Green Chilies
  • 1 cup canned/frozen corn
  • 1 cup canned black beans
  • 1 teaspoon ground cumin, or to taste
  • ½ teaspoon chili powder, or to taste
  • ¼ teaspoon cayenne pepper
  • salt and fresh ground pepper, to taste
  • 1 tablespoon chopped parsley (you can also use cilantro)
  • 1-1/2 cups shredded Mild Cheddar Cheese
