Zucchini Muffins with Lemon Glaze

Ingredients

  • ¼ cup canola oil
  • ¼ cup sugar
  • 1 egg white
  • 6 tablespoons flour
  • ½ teaspoon baking soda
  • ¼ teaspoon almond extract
  • ¼ teaspoon ground allspice
  • ½ teaspoon ground cinnamon
  • ½ cup grated zucchini (squeeze dry before measuring)
  • ⅓ cup powdered sugar
  • juice of half a lemon
