Watermelon Salsa

Watermelon Salsa

Hey there Delish D’Liters! In case you’ve been wondering where I’ve been (and where are the new recipes), I was recently away on vacation on the beautiful island of St. Maarten, celebrating my wedding anniversary with the hubster! It was an amazing time, and now I’m back, feeling refreshed, rejunvenated, and ready to share some amazing new recipes with you!  With Cinco De Mayo approaching fast, I’ve put a sweet and spicy twist on a classic fresh salsa, to spice up your Cinco De Mayo festivities. My watermelon salsa is an awesome way to do something new in the salsa department, instead of serving the same old pico de gallo.  I combine juicy watermelon with fresh cucumber, basil, onion and lime juice to create a sweet and tangy salsa that’s  the perfect side dish for grilled fish, chicken, seafood or even just to top some tortilla chips!

Ingredients

  • 2 cups finely diced seedless watermelon
  • 1 cup finely diced cucumber
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons lime juice
  • ¼ cup chopped fresh basil
  • ¼ cup minced red onion
  • 2 scallions, chopped (green parts only)
  • salt and pepper, to taste
