  • 1 cup frozen corn kernels
  • 1 cup yellow masarepa
  • ¼ cup unbleached AP flour
  • ⅓ cup raw cane sugar
  • ¼ tsp kosher salt
  • 1 cup grated whole milk mozzarella
  • 1½ cup fat free milk
  • 2 tbsp unsalted butter
  • Colombian quesito or Mexican queso fresco
