Almond Crusted Mahi with Sundried Tomato Sauce

This meal is really just something I came up with last week when I didn't feel like making anything with chicken or anything really heavy. I just used a bunch of stuff I had on hand that I thought might go good together. The measurements below are guestimates since I didn't really measure anything out exactly. However, I did get the sundried tomato sauce recipe from Dr. Oz's website and I rea

Mahi Mahi Pineapple Skewers with Tomatillo Salsa

Since the season of Lent is now upon us again, my husband and I are giving up all meat (we are still eating fish). We have done this in the past and my husband actually enjoys the challenge of being a vegetarian for 40 days. Since I couldn't make steak for Valentine's dinner I decided to make something with fish. We have both been wanting to make some kind of shish kabobs and I thought this r

Oatmeal Cream Pies

I seriously can't remember the last time I ate a Little Debbie. I do know that I ate them as a kid and yes, they were really yummy, but now that I know what's actually in them I can't bring myself to eat one. A Belated Thanksgiving Recap

It may be a little late (ok an entire week) but I wanted to post about the great Thanksgiving I had. It was my first Thanksgiving not spent at my parents which was a little weird for me, but it was still wonderful. I had a great time at my in-laws and got to contribute a few dishes of my own. All of the food was really really good. My in-laws even had home grown sweet potatoes

For my first time making and eating acorn squash I was really happy. This recipe used many of my favorite ingredients like quinoa, spinach, and feta. Not only does it look pretty, it's also pretty healthy. As with stuffed peppers, you can really add anything you want to this. I also found out that acorn squashes last for a few weeks after purchase so I bought 2 and am already

Halloween Pumpkin Spice Cookies with Maple Cinnamon Frosting

Happy Halloween! I finally got around to making some Halloween treats today even though they weren't really what I had in mind. Pumpkin Bread

I still have a bunch of canned pumpkin I'm itching to use up. So far I've made pumpkin coffee creamer, pumpkin chocolate chip cookies (good, but not my favorite so maybe I'll try these again), and even a face mask.  I'm pretty sure I've made pumpkin bread before but it has been a really long. I didn't have a recipe on hand so I did some searching. When I came across a pumpkin-beer bread

With the abundance of pretty fall squashes available right now, I promised myself I would try and make at least a few dishes with them.  To be honest, I've never really made much with butternut squash (besides a soup I made last fall) or any of the other varieties in season. However, I decided to try and cook with them, whether the dishes turned out or not.&

Sweet & Spicy Cornbread

My husband made some awesome chicken chili last week and I made some cornbread to go along with it. I adapted a recipe I had printed off a long time ago and decided to kick it up a notch with some fresh jalapenos. It turned out really yummy and was great with our chicken chili. I didn't get any pictures of the chili, but will be sure to get some next time he makes it

Squash Casserole

With about a month to go until the official start of Fall (Sept, 22nd) and the nice weather we have been having, I am already craving all kinds of fall foods.... soups, pies, chili, casseroles, pumpkin spice lattes, just to name a few. Although I am not a fan of cold weather, I do like the Fall. I'm ready for some Football parties so I can make lots of yummy appetizers and desserts!

Stuffed Salmon with Sriracha Cream Sauce

I found this recipe through Pinterest and even though I'm not a huge Salmon fan, this looked too good not to try. Plus my husband likes Salmon, so I knew he would appreciate it :). I have a love for hot sauce and the sriracha cream sauce is out of this world. I may even use it on a sandwich or something. Anyways, I think I overcooked my Salmon a little since I'm not used to making it, but it still

Stuffed Salmon with Sriracha Cream Sauce

I found this recipe through Pinterest and even though I'm not a huge Salmon fan, this looked too good not to try. Plus my husband likes Salmon, so I knew he would appreciate it :). Chocolate Zucchini Muffins

But, one of my co-workers had brought in a bunch more of her zucchini and mentioned something about a chocolate zucchini bread recipe she had seen. So, I thought I would give it a shot myself. Intead of bread though, I opted for muffins. And I also made them mini size. Since I have been working really early in

Baked Falafel

There's a restaurant near the college I went to called University Pizza and Deli that has awesome falafel. They have a mixture of foods, including many middle-eastern dishes as well as pizza, pasta, and sandwiches. Everything I've ever had from there has been really good. I made my own falafel the other night, but decided to bake it instead of fry it.  I also make a tzatziki sauce to go with

4th of July Strawberry Cheesecake

Happy 4th of July everyone! Today we are planning a big cookout at the in-laws and my husband and I had a couple different things we made to bring over. For dessert, I finally decided on a strawberry cheesecake.  I searched for some recipes and found that many were just a regular cheesecake with a strawberry topping. I wanted to incorporate the strawberries into the actual cheesecake.
