Strawberry Shortcakes

Baking Day! This is actually round two of finding a shortcake recipe I liked today. The first one was similar to a spoon bread or biscuit. It was too uncontrollable for my liking. I decided that I wanted something similar to a scone or uniform biscuit and I finally found it. A simple, yet delicious shortcake recipe that will come in handy for other delicious fruits! Stra

Asparagus, Mushroom and Bacon Popover

Happy Memorial Day! I actually went out and bought a cast iron pan today. I've been eager to purchase one but have been putting it off. A couple of years ago I bought a dutch oven {which is cast iron with enamel} and absolutely love it. There are so many great things that can be made using cast iron, it's exciting to think about the possibilities. Breakfast for dinner has

Bean and Rice Burritos

It's been a week full of rice. I even made a baked rice pudding for dessert! I love mexican food and have been wanting to try this particular recipe for quite some time. The chipolte peppers in abobo sauce give the bean and rice mixture a smoky flavor; and I loved that they use greek yogurt instead of sour cream. This is definitely a healthier choice and great for vegetarians or vegans, wi

Tarragon Chicken with Leek Cream Sauce

Any chance I get to use my dutch oven is my favorite! This recipe is easy and quick with great ingredients. Tarragon is a delicious herb that I don't think gets enough use. It adds a nice light but present licorice flavor to anything you cook. Cilantro-Chickpea Quinoa Salad with Lemon Dressing

I love trying new things, particularly ingredients I've never worked with. I took the plunge and decided to use quinoa. Yes, I've eaten it before, just never gotten the chance to make something with it myself. This salad might not look as desirable to eat, but it sure is delicious! Kimchi-Bulgogi Panini

I knew right away when I saw this recipe I had to make it. I love Korean food, especially bibimbap. I hope to make it soon. Bulgogi is another great dish, which is included in this fabulous panini. Spicy Sausage Pasta

I was in Florida last week from the 7th until 14th. I had a great time visiting with my family... eating at local eateries and drinking delicious drinks! I also went to a hip restaurant in winter park called Prato. From there I ordere

Bagels with Lox

What a great reason to wake up in the morning... Lox! When growing up my step-dad, Mike, introduced us to a ton of great eats. He's Jewish so we got to eat a lot of different things we had never had before, this was one of them and definitely my favorite. I remember getting up in the morning and walking into the kitchen and there would be a spread of yummy bagels with lox and garnishments. I'm t

Butternut Squash Stuffed Shells with Goat Cheese Sauce

Happy {belated} New Year! I've been so busy these past few weeks with my internship I've barely had time to blink. All I can say is that I love it though. Creme Anglaise

This is definitely Timmy's favorite sauce for any dessert. I said I was making it to go with my pear galette and he got super happy. He describes it as a melted ice cream and he's completely right. Making the sauce is super easy, you just need to make sure that you don't overcook the final custard. The great thing is that this is the base for many things like ice creams or advanced creams l

Pad Thai

When I lived in Florida there was an amazing Thai restaurant that I used to go to, I always ordered one of their specialties called hurricane shrimp. Because of my love for that dish I never actually ordered Pad Thai or had eaten it before... until I moved to Utah. When I went out to eat Thai food the other day, I was unimpressed with the restaurants attempt. Seeing as I don't cook muc

Veggie Wraps with Hummus and Goat Cheese

July 1st is getting closer and closer. I'm so excited to spend a few days in Florida with my family. I'm hoping to grab some delicious bite and maybe have a few drinks around Orlando. Apparently the Food Trucks have become more popular out there too. Having discussions with a fellow classmate, opening an Indian truck would be awesome. Naan pizzas and burritos... yum! Now ont

Balsamic Vinaigrette

I've never really loved balsamic vinegar, I'm more of a red wine vinegar lover. But this recipe is great, the honey and dijon really brighten up this very traditional vinaigrette recipe.I also made some roasted red pepper hummus today, using my hummus, I just added roasted red pepper to it and voilà! I almost considered adding some scallions but I didn't. Maybe next time... Balsamic V

Citrus Grilled Ling Cod with Cucumber-Pineapple Salsa {in a pita}

I had originally planned to make this last week but my schedule got the better of me. I just can't seem to get a continuous amount of downtime these days. Thankfully by next Friday I'll be done with most of my summer classes.  When I first saw the recipe I thought it sounded great. The recipe uses halibut, and while we have halibut, I wanted to use ling cod instead. It's very s

Wasabi-Glazed Salmon BLT with Sriracha-Dill Mayonnaise

I've been super busy with my summer classes... thank goodness they'll be over on June 22nd, plus I'll be closer to finishing my degree! I decided that I needed to make something new so that I could make a post, so I picked something quick and easy. This recipe is based off of a Martha Stewart recipe that I was interested in trying. I changed it a bit in terms of what goes on the sandwich thoug
