Healthy Carrot & Seed Buns

Summer is over and it's getting colder in Sweden and what is better to eat on a rainy day but Soup and a hearty healthy Carrot Bread? In this recipe I added loads of different seeds since I love the crunchy texture and also, they get way healthier than eating just a plain wheat based bread. Blueberry Semolina Pudding

This pudding brings up so many childhood memories for me! My grandmother used to make this for me. In Sweden we usually make this with lingonberries but I wanted to try it out with fresh blueberries and I wasn't disappointed. If you don't make it overly sweet you can eat it for breakfast, but if you add lots of sugar and eat it with cream is more like a dessert. Blueberry Semolina Pudding

Healthy and Quick Lingonberry Loaf

I just love to bake no-yeast breads as it's so uncomplicated. You don't even have to kneed the bread. You basically just add all ingredients in a bowl, combine, spoon it into the loaf tin and bake. Who said it was difficult and time consuming to make homemade healthy bread? The dark corn syrup gives the bread a nice robust sweet flavour as well as making the bread darker in colour.

Quick Berry Jam

When I make berry jam, I always make a quick jam. I let my berries simmer in a saucepan for a while and then I add my desired amount of sugar. I don't want my jam to be to sweet, I prefer it to be as "healthy" as possible cause then I can eat more of it:-) And, I want my jam to have maximum flavour from the berries and not from sugar. It literally takes 10 minutes to make this quick jam. However,

Stracciatella Ice-Cream

It's summertime, and what's the best dessert for a warm summer day? Yes, ice-cream! I like my ice-cream full fat and the creamier the tastier. I added shredded dark high quality chocolate to make my Stracciatella Ice-Cream. The shredded bits

Rhubarb Ice Popsicles

Ice Popsicles are my favourite healthy dessert this summer! Here is another recipe to try out. I made a Swedish Old Fashioned Rhubarb Cream, I actually doubled the batch of below recipe and made both Ice Popsicles and rhubarb cream. The rhubarb cream is so nice eaten with cold milk and feels very refreshing this time of year, so I recommend you to try it out too:-) Old Fashioned Rhubarb

Vanilla Muffins with Fresh Strawberries

This muffin recipe is a keeper and a new favourite of mine! I'm not sure a muffin can taste much more of summer than this one and is best eaten outdoors on a sunny summers day:-) I used real vanilla seeds instead of vanilla sugar as I wanted a more intense vanilla flavour and I used fresh strawberries. If you use frozen strawberries, they get crushed more easily turning your batter into a

Quick Bread - Kavring

This Quick Bread, or Kavring, as it's called in Swedish, is a dark rye bread, with a sweet flavour from dark corn syrup. You basically mix all ingredients quickly, pour it into a bread tin, bake it, and 1 hour later you've got yourself an amazing breakfast bread for a long, lazy, weekend breakfast:-) Cut thin slices and add your favourite toppings, like cream cheese, ham and sliced cucumber.

Peanut Butter Cookies

These cookies are yummie! It's both peanut butter and salted peanuts in them which makes them chewy, crunchy, sweet and salty at the same time. The recipe yields 40 cookies, but I'm sure they wont last long anyway... Peanut Butter Cookies, 40 200 grams butter, room temperature 1 1/2 dl brown sugar (150ml) 1 1/2 dl sugar (150ml) 1 tsp vanilla sugar 1 egg 1 pinch of salt 1 dl peanut

Chocolate Muffins with Vanilla Cream

Chocolate time! I know chocolate isn't very summery, but I've been baking with mostly fruit and berries lately so I thought it would be nice with a little bit of change. They look like ordinary chocolate muffins, but once you take a bite you discover the sweet vanilla cream inside it, making these muffins not so ordinary anymore:-) The rich chocolate flavour from the muffin and the sweet

Swedish Flat Bread - Polar Bread

I'm so happy and excited today!! I found a great bread recipe and of course I have to share it with you! In Sweden we call this bread "Polar Bread" and I would say it's somewhat similar to a flat bread. I was surprised how easy and quick it was to make it, even though it's a yest based bread. The texture of the Polar Bread is soft, a little chewy and has a mild rye flavour. This is a keeper
