Mother's Day Meals

Hi folks. I know it's been a while since I posted here. I'm still around, and still cooking, but not having much time for photographing and tracking recipes.  Even when I try something new and we love it, I'm not making notes on what I'm doing. But today I'm just posting my Mother's Day plans here for safe keeping, because my brain is not a safe place to park anything these days, not if I

Slow Cooker Cheesy Chicken and Rice

Well, look, there is a real person at this blog. And today there is a real recipe. Three cheers, eh?I've been pinning many recipes, but trying few. Mostly I've been eating from the freezer (meals made times three, and two frozen) or just preparing dishes that are on the regular rotation (favorite meals). This meal is certainly not fancy, but on a very cold night, with a winter storm on the way, it

I am hopeful that soon I'll be back with a real recipe. I've been baking all of our bread for weeks now and I have a few recipes to share -- I'm especially excited about the sourdough recipes I've been using.I also have a new "cookbook" on the counter and hope to try some recipes soon -- it's Home Dairy -- and since several of us are Vitamin D deficient I am hopeful that I can boost our intake wit

Lenten meals

Admittedly, I have not been the best food blogger this past year. I don't think I would even call myself a food blogger these days, but I am reposting my list of suggested Meatless Meals, along with just a few that I posted in the past year. Hopefully it will help you get through Lent without too much suffering (although I guess that is the point, right?). Just try not to enjoy your meals too much

Our Lady of Lourdes, pray for us

Our Lady of Lourdes and St. Bernadette......set on a bed of graham cracker crumbs with a chocolate chip blondie grotto behind her. There is a puddle of melted chocolate mud and some parsley, for the muddy water Bernadette drank and the weeds that she ate.The blondies were not such a good idea in hindsight -- the blondies were too cakey. We used metled chocolate mortar and eventually

an excuse to eat yummies for dinner

There is not much I like less than professional sports (with the exception of baseball -- go Reds!), except maybe the hype that comes with, but I share my hearth and home with three big men-boys and a man-husband, so today is a big day.I will find a quiet corner to knit or sew and watch Tess of the Durbervilles, or an old musical with my sweet girl, Faith, but only after I prepare a table f

Pot Roast with Red Wine and Mushrooms

Whenever I spy a chuck roast on sale at the grocery, I grab one or two. While chuck is a tough and sometimes fatty cut of meat, it can be used for a tender pot roast, or any variety of tasty stews. Cooked long and low in a tasty broth, chuck roast is one of the most comforting cuts of beef I know. The tough gets all soft and most of the fat cooks down and can be skimmed off to make gravy. On

Pom Ginger Martini

A friend recently recommended this beautiful and very tasty cocktail. I served them for Thanksgiving and I have enjoyed them several times since. My friend Gina sent me a recipe which included careful measures of juice, ginger beer, vodka, a bit of lemon zest and grated ginger, with pom seeds to top it off (or sink to the bottom), but I quickly decided that the Pom juice, the ginger beer (or ginge

I think Thanksgiving is one day which separates the cooks from the...well...reheater-uppers, I guess you could call them. Those who buy gravy and grocery store brown and serve rolls. A busy week for Catholic mamas

The triple whammy of All Hallows' Eve, All Saints Day, and All Souls Day always leaves me needing a vacation. We didn't even do very much, and I still feel wiped out.Today we enjoyed our Soul Cakes, a day or two late. Definitely better late than ever. How are you recovering on this first November Saturday?

I did not realize this dish looked like a sunflower until Faith saw the picture and said so (duh!). It would be great if you had a sunflower theme. Brown Sugar Butter Cookies

These cookies aren't very glam, but they are full of buttery, sugary love.Yesterday morning at 7 a.m., I was barely awake when my cell phone rang. Oat Flour Apple Blueberry Crisp

Since I "went wheat-free" again recently, I have, for the most part avoided sweet treats. The few sweets I have baked, I have used oat flour, which I really like using. It doesn't have the same properties as wheat, by and large, but in some dishes it really doesn't matter. And it takes great -- far superior to wheat in the taste department. It doesn't create the same crumb in cookies and cakes,

No, we haven't started eating baby food, but this would be a great recipe for an older baby, one that has started to eat yogurt and cheese. This recipe is great comfort food, however. What is this, you say, a pancake blog? I know. I am a little obsessed. I do love pancakes. They are such a simple pleasure. And you know I love my grains. This recipe is a great compliment to the Banana Oat Pancakes. On days you don't have a ripe banana, try these. They are very much like your standard wheat pancake, but taste like a bowl of oatmeal. Very yummy. The texture is solid, like a whea

Ask and you shall receive

Some people in this world are just too good. It's as if they are trying to make up for all the bad. Not that it's possible, but their effort is so above and beyond the normal that it makes you wonder if...maybe...If all the people in the world had just a fraction of the selflessness, we'd be in great shape. As it is, people like that are just bright, shiny gems in our lives.I have a very dear frie

When I was completely off wheat, I had a hard time when hunger struck between meals. What to eat, what to eat? It seems like a ridiculous thing in a house stocked with food. No one goes hungry here, but all of my usual snacks, a piece of toast with peanut butter, a couple crackers and cheese, they were off limits. I don't know about you, but when I go on a "diet," I become very focused on food and

Steak and Avocado

A couple of weeks ago my college boy was home for just a few days, between apartments. I planned a few meals I knew he would love and he actually prepared this one for me! What a treat. The taste of the steak and salsa is similar to this recipe, but the ingredients I loved most were the steak and avocado. The warm steak and creamy avocado, oh...yum. How I'm feeling about wheat

You may remember that I have been fasting from wheat (and rye and barley). I've not been diagnosed with any wheat allergy, but I did a little research and read a book about interstitial cystitis (The Better Bladder Book) and made a personal decision to do a trial of fasting from wheat just to see how I felt.I have been wheat-free for one month.  I felt strongly that there was a possibili

So I am posting my menus here so I can hang on to them permanently and refer back to them if need be.I still don't know if wheat free will be permanent for me, b

Banana Oat Pancakes (Wheat Free, if need be)

I headed into week two of wheat free. So far, no results, but I'm gonna stick with it. I also removed oats from my diet last week, but I really just didn't have my heart in it. I eat a lot of oats. Probably not quantity a lot, but a little here and there, and I had really nothing to fill that gap with. So I added back wheat-free oats this week and I am much happier. I can eat my granola and I can

Honey Butter Popcorn

I beg your pardon for that really awful iPhone picture of this delightful treat, but I really have to blame it on the deliciousness of the recipe itself, because once I tasted this yummy stuff, I wasn't getting off the sofa to get the camera. No way. I was getting ready to watch Cinderella Man last night -- one of my favorite flicks -- when I decided I needed a bowl of this popcorn I had linked to

BBQ Beef Brisket

I have so many recipes to share with you, I don't know where to start. I have lost my oomph here and I don't know how to get it back. Do you ever feel that way about something? Something you previously enjoyed and then just suddenly didn't really care to do anymore. I did that with scrapbooking a couple years ago, but I really just replaced it with another craft. I am still cooking, I just can't m

A Menu for the Fourth

I usually enjoy preparing a big meal on the Fourth of July with lots of yummy desserts to enjoy through the firework-filled night. This year it may be the heat, or maybe it's the state of the nation getting me down, but I don't seem to really have it in me to cook a huge spread. Extended family will be at my house, however, and I'll have to make sure they have something to eat, so I went through s

Salted Deep Dish Brownies

I have recently become aware of how the simple sprinkling of coarse salt on a baked good can completely change the taste. I experimented for the first time last year with Jeni's Salted Caramel Ice Cream (apparently I forgot to blog about that one), and then at Christmas with Annie's Salted Caramel Chocolate Shortbread Bars. Of course, I had tried neither of those recipes without the

Fish Tacos with Lime Cilantro Crema

I'm joining Sarah and Pam today to share the best of my time spent online. It's funny, since I got a Kindle Fire for Christmas, I definitely spend more time online. But it feels like I spend less time online, because I rarely sit at the computer with my back to my family. I think there is something to be said about that. When I am online, I am usually at the kitchen table or in a chair in the livin

Roasted Strawberry Ice Cream

I am so sorry you can't get a lick here on your computer screenMy plan this week was to get so much blogging done -- get all those recipes posted that have photos sitting on the desktop. Alas, life never goes just that way, and other things got done instead. But, that's ok, they were real things. At least more real than blogging about food. This recipe needed to be posted next, however, because it

Lidia's Polenta

During the hot summer months I don't often make a dish that requires a long, slow simmer on the stove. Not only does a long, slow simmer heat up the kitchen, but those heavier meals are often too heavy for hot weather (even when the house is air conditioned). Occasionally, however, a simple meal like polenta and sauce is a nice dish to enjoy on a rainy summer day -- one like this recipe for Lidia'
