We were looking for a side salad that we could make ahead of time to take camping that would go well with  turkey dogs, burgers or whatever we decided to make.  We also needed a salad that would travel well and last the entire weekend in a cooler.  This salad was packed with healthy ingredients and didn't turn to mush in the old igloo cooler (like a lettuce or pasta salad may.)

Chicken Taco Salad

Blueberry Zucchini Bread

This recipe was so good. We used our mini loaf pans to make this. It made it easy to give a cute little sample to friends. The best part about it is that we have a freezer full of shredded zucchini that we froze in 2 cup portions.
