Langka (Jackfruit) Meringue Tarts

Summer vacation has started so it's that time of the year again when I am so busy keeping my two girls occupied. Whenever we're at home, I keep them busy with art projects, reading, math reviews...and of course, BAKING! As I've mentioned before, baking is one thing my daughters and I enjoy doing together. This Langka Meringue Tarts that I am sharing with you today were the first sweet treat

Mango Sticky Rice Dessert

In my last post, I've mentioned that my family and I soooo love mangoes. I guess now you'll  believe that what I said is true...'coz I'm posting another mango recipe again! But truth be told, this classic Thai dessert that I am sharing with you today is one mango treat that  only yours truly enjoy eating. The first time we tried this at a Thai restaurant, I fell in love with it. Unexpe

Mango Cake with Mango Cream Frosting

Summer is almost here...and do you know what that means? Mangoes are in season again! And yes, that makes my family and I sooooo happy! We love mangoes, you know. Though we enjoy eating it plain, we also love savouring this delicious fruit in different forms. We love making salad, ice cream, milk shakes and ice candy with it.  Indeed, the wonderful taste of ripe mangoes never fail to ama

New York Style Pizza: Cheese Stuffed Crust Bratwurst Onions Pizza and Spinach Anchovies Pizza

Making pizza from scratch has always intimidated me. Thanks to Baking Partners, now I know that it's not that difficult! New York Style Pizza is the chosen theme for this month's Baking Partners Challenge. Honestly, I was hesitant at first and was planning to just skip this one. But after giving it a serious thought, I decided to give it a try. There's nothing to lose anyway.

Pineapple Upside Down Cake

Of my two daughters, Cherlin (the youngest) is the one who shows more interest in  both cooking and baking. Whenever she's at home, you'll see her helping me in the kitchen --- preparing/measuring/passing the ingredients, cracking eggs, mixing, stirring, sauteing and even slicing and chopping vegetables. Instead of reading story books, she prefers spending time looking at cookbook

Biko (Sticky Rice Cake with Fried Coconut Milk Curd Topping)

It's the first day of May...and in the Philippines, it's the start of the monthlong Flores De Mayo (Flowers of May). It is a religious celebration held in honor of the Virgin Mary, wherein devotees gather together every afternoon or evening to offer prayers, songs and flowers to Mary. After the ceremony, the Hermanos or Hermanas for the day will give away homemade delicacies and snacks to the pa

Nutella Magic Cake

I've been seeing a lot of Magic Cakes on the web since March...and honestly, I wasn't so interested. But when I found the Nutella Magic Cake at Kirbie's Cravings, I knew I have to try it! You see, we're big Nutella fans in this family.  We eat it with toasts, bagels, pancakes, waffles, crepes, crackers, ice cream, strawberries, bananas, and even apples. We bake with it, make desserts wit

Oven Roasted Brussels Sprouts with Bacon and Roasted Pecans

Green Cabbage is one of the vegetables that my daughters don't wanna eat. They say it smells awful. Whenever I make pancit, nilaga, chopsuey, vegetable stir-fry or even salad with green cabbage in it, they would eat everything else except the green cabbage. That is how much they hate this nutritious vegetable. They don't have a problem with red, napa and savoy cabbages, neither with bo

Cotton Soft Japanese Cheesecake

For this month's Baking Partners Challenge, we made cheesecake! We were given four recipes to choose from...all of which are really good, but I didn't have a hard time choosing which one to make. Aside from being the one that seems easy to do, the Cotton Soft Japanese Cheesecake is something that the hubs has been requesting me to bake for so long. He went to Japan a number of times before we go

National Soyfoods Month

Did you know that April is National Soyfoods Month? Well, it is...and though we're already halfway through the month of April, it's not yet too late to learn about soyfoods and how they can be incorporated into our everyday meals. I'm certain that many are familiar with soy and eat soy products on a regular basis, but for sure, there are some who haven't even heard of it and its benefits.

Sugar Crusted Buttermilk Chocolate Chip Muffins

It was my eldest daughter's 11th birthday last April 9, and she requested that I make these Sugar Crusted Buttermilk Chocolate Chip Muffins which she really loves! Of course, I granted her request... I baked a dozen thinking that it would be enough 'coz she only invited four of her close friends. But just a few minutes after I took them out of the oven, the hubs ate a piece, and then

Shrimps in "The Whole Sha-Bang" Sauce

My family & I love trying out different restaurants. But I know you'll agree with me when I say that eating out can be really expensive...and the worst is there are times when the food we eat aren't worth the money we are paying! That for me is so disappointing! So to avoid this, we try to eat out less often. I cook most of the time and we just save eating out for Sundays and special occasio

Oxtail Kare-Kare

I honestly don't remember the last time I cooked Oxtail Kare-Kare. My daughters aren't fond of eating it, that's why. They prefer Seafood Kare-Kare so that's what I usually cook. But the hubs requested that we have the Oxtail version for Easter, and being the loving wife that I am, I gave in to his request. :) For those of you who don't know what Kare-Kare is, it is an authentic Filipi

Tuna and Mushroom Torta/Frittata

In the Philippines, what's known as Frittata to Italians is what we call Torta. I grew up with my mom cooking torta of all sorts....from chicken, fish, canned sardines, crabs, eggplant to the most common ground beef or pork and canned corned beef. Most of the time, she would cook it for breakfast to make use of dinner leftovers. During Holy Week, torta made with either canned sardines or tu

Homemade Itlog na Maalat (Salted Eggs)

Been wanting to make salted eggs since I started the blog, but I just couldn't find fresh duck eggs anywhere. Duck eggs are a lot better to use in making salted eggs because of their tough shells which give them a longer shelf life. They also have larger yolk to white ratio compared to chicken eggs. As you know, it's the yolk that matters most in salted eggs so the large duck egg yolks would be

Just as promised, here's the other bread that I made using tangzhong method. I actually used the same recipe as that of the Bacon and Cheese Bread which I posted the other day. Bacon and Cheese Bread Using Tangzhong Method

I must admit that I'm really not a big fan of bread making. Aside from the banana bread which I frequently make for the hubs and the girls, I very seldom make other types of bread. Though bread may be cheaper homemade, the time and hassle involved make store-bought ones more preferable for me. But everytime I make bread at home, the excitement I see on my daughters' faces as they wait for t

Cheese Topped Shepherd's Pie

It's March 17...and do you know what that means? It's St. Patrick's Day --- an Irish holiday in honor of St. Patrick who is the most recognized patron saint of Ireland. We're not Irish so we don't really celebrate it. :) But every year, my daughters would always request that I make something green which is the color associated with St. Patrick's Day celebration. This year, I opted not to. I told

Salmon and Vegetables Frittata Cups

Over a month ago, I saw Sandra's Easy Cooking's post on Frittata Cups and it caught my attention. Though I've made lots of frittata in the past, I have never tried making it into small servings. I've always made skillet sized ones, so I thought Frittata Cups like these look cute and will be more fun for my girls... Just like omelet, I love making frittata to use up w

Chocolate Mousse

What I have for you today is a family favorite dessert that I'm sure you'll love. I'm talking about this irresistible Chocolate Mousse, the recipe of which I got from Laura Vitale. My brother and I were both in Catholic schools that time so we knew the importance of observing this tradition and we never complained about it. After a two-month break, Kulinarya Cooking Club Challenge is back with a very interesting theme for the month of February...and that is "PULANG ITLOG" (Red Egg) or what's also known as Itlog na Maalat (Salted Eggs) in the Philippines. Like other Filipinos, I really enjoy eating itlog na maalat. I love it as a filling for pandesal, as a topping for bibingka and large ensaymadas, and as an ac

French Macarons with Chocolate Ganache Filling

Making French Macarons has been in my to-try list since I started blogging...but I've read so much about how finicky it is to make. I even remember reading in one article that "making French Macarons takes skill and is not advised for novice bakers". That intimidated me and I decided to just set aside my dream of being able to serve my daughters homemade French Macarons. I was already contented of

Mamon Espesyal

With Valentine's Day coming up, I thought of sharing with you one of my favorite Filipino treats. It's not something chocolatey, but who says Valentine's Day is all about chocolates? It is a day to show our love and appreciation for those we care about, and I believe one of the perfect ways to do that is to give them homemade sweet treats (which doesn't necessarily mean something with chocolates

Christmas is just around the corner and I'm pretty sure that some of you will be doing a lot of baking for the holidays. For my family, baking has been part of our Christmas tradition since Clarise (my eldest daughter) was 3. Bulalo (Beef Shanks with Bone Marrow Soup)

The province of Batangas where my dad came from is known not only for the  famous Kapeng Barako (Batangas coffee) and its beautiful beaches, but also for this comforting beef dish called Bulalo. For many, Batangas is a favorite spot for swimming or scuba diving, and on the way to their destination, it’s always a must to stop at one of the many bulalo restaurants along the way.

Pork Sisig

I've made Pork Sisig a number of times already, but I always failed to take pictures. Either I didn't have time before I leave for the party that I had to bring it to or I was too excited to eat it to find time for a photo shoot. Though I love pork sisig, it's something I don't make on a regular basis mainly because of how wicked this dish is and also because of all the chopping involved. Thanks

Scottish Shortbread

A couple of high school friends who are now living in London visited us two weeks ago, and they brought me a tin of Marks & Spencer Scottish Shortbread. Shortbread is one of my favorite things in the world, so even though I haven't tried Marks and Spencer's, I was definitely delighted. The tin itself is very nice. It's depicting an old red English telephone box with a variety of characters eac

Baked Filipino-Style Spaghetti

Like me and Ryan, our two daughters love Filipino-style spaghetti. They love it so much that it's something they very often request me to cook. Well, it's the irresistible sweetness in it that makes it seem addicting for them. Whether it's with meatballs or with the regular ground beef and hotdogs, this pasta dish never fail to bring sweet smiles on their faces. But there's a special version of it

Filipino Style Fruit Salad and Cherlin's 7th Birthday Party

Hi everyone! Hope you are all doing well and enjoying the week! I was very busy preparing for Cherlin's 7th birthday party that's why I've been MIA. Chocolate Chip Cookie Cake for My Princess Cherlin

Today is my youngest daughter's 7th birthday...a day she has been anticipating since the start of 2012. Just like any other typical girl her age, she has been very excited and busy planning about it for months now --- from the food she wants to eat for breakfast, lunch and dinner and the treats she wants to bring to school for her classmates, down to how she wants her birthday party to be. A

Adobong Kangkong (Water Spinach Adobo)

Back when I was young, there was this TV commercial in the Philippines of a school boy reciting a poem about kangkong (water spinach) which became so popular with the tagline, "Ang Kangkong, Bow". That commercial was one of those launched by the Philippine Department of Health in its effort to promote healthy eating among school children. It specifically tells about the nutritional benefits o

Chocolate Cake with Cherry Cream Cheese Frosting

More than two decades ago, I prayed for someone who will love me truly...and yes, God answered that prayer! He gave me Ryan...the man who has been by my side for the past 19 years and who's now my husband and father of my two beautiful girls. He is all that I've asked for and many more...he's a wonderful and loving husband, a great father, a good and loyal lover and friend, and above all that, m
