Philly Cheese Steak Stuffed Bell Peppers

I saw a picture for Philly Cheese Steak Stuffed Bell Peppers a while ago and thought they sounded quite tasty.  After the success of the Stuffed Enchilada Peppers, I figured I might as well give them a try.  Who knew you could stuff a pepper with so many different things?!The hubby, baby and I loved these Philly Cheese Steak Stuffed Bell Peppers!  The rest of the kids loved the fill

Whipped Caramel Filled Banana Cupcakes with Cream Cheese Frosting

I must have grown up sheltered, because I had never heard of banana cake until just a couple years ago.  It was my father-in-laws birthday and he wanted a banana cake.  So I made him one.  Kinda.  I made up a batch of my delicious Banana Bread and cooked it in a cake pan.  Then I threw a little Vanilla Buttercream Frosting on the top and called it good. :) If only I had kn

Stuffed Enchilada Peppers

I love anything with the word "Enchilada" in the title.  These Stuffed Enchilada Peppers were easily added to the list.  They were quickly devoured by the family!  There were a couple kids who just ate the filling, but the rest of them even ate the peppers.  In my house, that's quite the accomplishment!  My kids love their veggies - even brussel sprouts (gag!) but for some

Slow Cooker Sausage and Tortellini Soup

Yesterday as I pulled my crock pot out of the cupboard, I noticed it wasn't very clean.  My kids seem to think there's a magician in our dish washer that will get off all the stuff they don't want to take time for when they're doing the dishes.  I called all of the kids downstairs and had them sit on the couch.  I showed them 2 plates that I pulled out of the sink, one that had been

Easy Crock Pot BBQ Pork Sandwiches

I know I've said it before, but I LOVE my crock pot!!  These Easy Crock Pot BBQ Pork Sandwiches are just one more reason I love my crock pot as much as I do.  The pork comes out tender and delicious and the family all loves it.  Even if the kids think it's gross to put Coke in with the meat.  :)1 (2-3 pound) boneless pork roast 1 (12 ounce) can Coca Cola1 (18 ounce) bottle BBQ

Easy Roasted Red Pepper Hummus

With summer just around the corner, I'm on the look out for snacks and meals that won't heat up the house.  This Easy Roasted Red Pepper Hummus is a perfect snack or meal for the summer time, or anytime.  Now if only I could get the kids to eat more than 1 or 2 bites of it...I served my Easy Roasted Red Pepper Hummus with pita crackers (A. Lips and Mustache Party

My sweet little girl turned 12 this month.  For her birthday she requested a mustache party.  I tried and tried to talk her out of it (I thought she should have something a little more girly), but I didn't have any luck.  I ended up adding lips to her theme to make it a little more girly and it turned out darling!I set up a photo booth with some cute lip, mustache and glasses props,

Lasagna Roll Ups

I've been quite the slacker around here lately!  I've pretty much given up cooking.  Not really.  I've decided to give each of the kids a night of the week they get to cook dinner.  It's been pretty much amazing!  I actually have time to help the kids with reading and homework now and I still get to cook on the weekends. These Lasagna Roll Ups were one of the things I got t

Wacky Birthday Party

It's been a month full of partying around here.  This Wacky Party was so much fun to plan!  My oldest turned 14 and I wanted a party that fit him and his personality.  He loves to joke around and be silly, so a wacky party was the perfect fit.  Because not all 14 year olds are as wacky as mine, each of the kids were given a bottle of "Wacky Pills" (M&M's) to get the party s

Dipped Peanut Butter Crispy Bars

It's been a while, I know.  I have 2 kids with birthdays in April so we've been partying like crazies around here.  And I'm proud to announce that I've survived it all!  These Dipped Peanut Butter Crispy Bars are one of the treats that showed up on the table at my 14 year old's party.   There's something magical that happens when you combine peanut butter and chocolate.  I

Key Lime Pie Cake Pops

I'm so excited that spring is finally here!   We welcomed it in style.  With snow.  I was due with my 4th (and 5th) in July and actually wanted snow in the spring.  I even requested snow in June.  It ended up snowing on May and I was happy as could be.  Pretty sure I was about the only one happy about it though.  This year I'm not requesting snow in June.&n

Unicorn Poop Cookies

My little 4 year old is in a unicorn phase.  Or a princess horsey phase, as we like to call them.  We have a unicorn costume I bought years ago for her older sister for Halloween.  My little 4 loves to pull it out of the closet and run around in it.  Since she is obsessed with unicorns right now, I figured she'd love these Unicorn Poop Cookies.  She did.  And so did e

Candy Popcorn

Growing up I had a great-aunt that I loved to spend the afternoon with on Sundays.  I would dress up in her old fancy dresses, we'd play games, chat, and make Jell-O popcorn balls.  I LOVED the Jell-O popcorn balls, but sometimes I wanted the popcorn not in a ball.  If only the popcorn wasn't so sticky.  This Candy Popcorn solves the sticky problem for when I don't want the pop

Microwave Lemon Curd

I remember seeing lemon curd in the grocery store when I was a kid.  It was by the peanut butter and jelly and I always thought it had to be the nastiest stuff on the planet.  After all, the only curd I had ever had was the cheese kind of curd and that mixed with lemon sounded way less than appealing.  The stuff had to be gagtastic (that's my new favorite made up word) at best.

Roasted Vegetables

When I was a kids I loved green beans.  Pretty much thought they were the best veggie ever created, second only to corn on the cob smothered in butter.  Until Mama cooked up some green beans fresh out of the garden.  They weren't salty or very soft and they were still kind of fuzzy.  Ever since I have eaten very few green beans that didn't come from a can.  In my effort to

Last night my sweet hubby came home super excited.  He heard on the radio that if you test drove a vehicle from one of the local dealerships, they would give you free tickets to the Utah Jazz vs Miami Heat game that's coming up this next Monday.  Even though I'm not much of a sports fan, I decided to be a good sport and go with him.  To make a long story short, I went to test drive

Susan's Granola

I like new words.  I remember being in 3rd grade and having a substitute teacher.  Her name was Miss Evans and I thought she was super cool.  Super cool because we had the same last name.  And also super cool because she taught me a new word.  Facetious.  I felt so cool using such a big word.  I still use it with my kids when I want to sound smart.  It's str

Candy Cane Hot Cocoa Mix

I think I have a bit of an obsession with peppermint candy canes.  I buy them by the case.  Literally.  They're one of my favorite things to buy when they go on clearance after Christmas.  I use them throughout the year in my Peppermint Meltaways, White Chocolate Peppermint Cheesecake and Candy Cane Hot Chocolate Mix.  I might even have the urge to make Candy Cane Fudge so

Cranberry Cream Cheese Dip

I've never been one to eat fruit in salsa.  I've always thought it was weird.  Until I tried this Cranberry Cream Cheese Dip.  It was a life changing moment.  I quickly fell in love with the dip and made some for my sweet hubby.  I had him try it out before dinner and he took the plate and a package of crackers and told me he wasn't going to be hungry for dinner.  I t
