Mac n Cheese...

I finally made a decent batch of mac n cheese. After quiet a few flops. You can use light cheese in this recipe from the April issue of Cooking Light. I used whatever I had on hand. No light cheeses. Shellfish Allergies...NOT!

For fifteen long years I was allergic to shellfish. Started with a few hives, and got worse from there. That was that. But then a couple months ago I got a reaction to penicillin and decided to visit the allergist to see what was what. Scratch test for allergies. I had high hopes that maybe I wasn't allergic to shellfish any more. But my arm got red. Really red. It got itchy. Really itchy. Hives.

Grilled Steaks with Ancho Butter and Rosemary Roasted Potatoes

The Griller is really getting the hang of it. Another steak grilled to perfection. This one was marinated in molasses, sherry vinegar and ancho chile powder. Shaved Brussels Sprouts

Another gadget...

Adding to the gadget collection. This time it's a quesadilla maker, a gift from a friend. Hot weather calls for cold soup! Not really, I like soup any time, hot or cold. I've had gazpacho before but not like this one. My daughter had to bring in a recipe for her final grade in her High School cooking class this past year and didn't know what to make. Tomato Paella

This is a delicious recipe and a nice change from the usual side dish. I didn't grow tomatoes this year but the vine tomatoes from the supermarket have been very good so far. South Carolina BBQ Sauce

Roasted Heirloom Tomato Soup

This is definitely worth a repost, especially since we're coming into tomato season! Heirloom tomatoes. The different colored tomatoes gives the soup a really deep color and a great taste. Crispy Potatoes

Crispy Potatoes. These were so good, the top was like potato chips while the inside was like a mashed potato. Distraction worked for me in this instance, forgetting about them in the oven the top got really crispy. They are sort of like the Muffin Tin Potato Gratins I made a while back that were also a big hit and everyone loved those as well. Both recipes by Martha Stewart Everyday Food.  Cr

Baked Fish with Fresh Herbs and Bread Crumbs

We were watching America's Test Kitchen over the weekend, even my husband likes this show. They were making fish, which is slowly creeping into our diet more often. Looked so good, he went out to find some sole so I could make it for dinner that night. No sole, so he came home with Tilapia. A little thick, but I managed to make rolls that didn't look too bad, except it took a little longer to cook
