Hello, dear ones!  It's been a few weeks since we've seen each other, so Merry Christmas and Happy New Year to all of you!  If anything would get me out of an early retirement, it's this cake, Chocolate Streusel-Ribboned Bundt Cake, from Lou Seibert Pappas wonderful cookbook, Coffee Cakes.   A few months ago, I came across a post by Joyce of  Kitchen Flavour

Nutty Fruitcake...12 Weeks of Christmas Treats

I have always loved fruitcake, even as a little kid, I loved it.  And, I'm talking about fruitcake with citron, soaked in booze.  Yeah, I was a weird kid.  Anyway, I'm always amazed when people say they hate fruitcake; so, I set out to make a fruitcake that would appeal to everyone, and I think I've done it!  My sister, who really doesn't like fruitcake, loved this versio

Russian Taffy...12 Weeks of Christmas Treats

Sunday dawned cool and dry, a perfect day for making candy!  Not sure if I wanted to make pralines, penuche, or brittle, I perused one of my favorite cookbooks and found a recipe for Russian Taffy.  Russian Taffy?  Never having heard of it, I did a quick search and found a link to the exact same recipe as well as other recipes that were fudge-like. In New Orleans, t

Chocolate Pie...12 Weeks of Christmas Treats

An incredibly rich and dense chocolate pie that is a cinch to make...I happened upon this pin, and as it was entitled Minnie's Chocolate Pie, as in, Minnie from The Help, I was quite curious.  But, no, not that pie. In true librarian fashion, or perhaps just in true skeptic fashion, my first thought was, "Really?  Minnie's pie? Did Kathryn Stockett publish a recipe?"

Pumpkin Pecan Crunch Cake...12 Weeks of Christmas Treats

So, do you wonder what you did before Pinterest?  I suppose I bookmarked everything that interested me, but now, I just create a new board. If you're like me, you have 100+ boards...is that excessive, do you think?  It does give an indication of why I have not only a double major, but a double minor, doesn't it?  A bit all over the place, that's a good descrip

Traditional Bakewell Tart...12 Weeks of Christmas Treats

And what a treat it is!  I've wondered for years what a Bakewell Tart tasted like, and well, now I know....scrumptious!  A lovely buttery crust, topped with a slightly tart jammy layer, and then the frangipane!  My goodness, the frangipane!  It's simply marvelous! As you all know, my husband is notoriously picky; however, he is a fan of almond flavor as well as

Stuffed Mushrooms

Are you a Downton Abbey fan?  I just love it!  In fact, I love it so much that I bought The Unofficial Downton Abbey Cookbook.  Yes, I did, and I'm having a blast!  Cannot wait until January 6, 2013, when season 3 premieres. These mushrooms were the first recipe I made.  Referred to as The Crawley Sisters' Stuffed Mushrooms, they are quite delicious and eas

Oven-fried Chicken Schnitzel

So, my life seems to be on triple fast speed.  But, aren't we all, I suppose.  I need an extra 3 hours per day.  Anyway, I do my best to cook at least 3 times weekly, eating the leftovers during the week.  My only requirement is that weekday dishes be quick and easy.   I was perusing one of my older cookbooks, Cooking with Cajun Women, and I found a

Double Chocolate Crinkles..12 Weeks of Christmas Treats!

Chewy.  Chocolatey.  Fudgey.  The chocolate crinkle cookie.  Really, it's a brownie in an easy to eat cookie-form.  No waiting to cool before you can cut into squares, although I do suggest you wait a minute or two, as the interior is molten lava hot.  After Andrew told me that I never make any cookies that he likes, I decided a chocola

Fiesta Quinoa Salad...Meatless Monday

So, I eat a lot of quinoa.  Quite simply, not only do I love the versatility of this little seed, but you can truly make it your own.  During the summer, I ate this version weekly.  At one point, I had so much basil, mint and cilantro, I made a green quinoa.  Delicious! We had a birthday pot luck at work with a salad theme, and I knew it was the per

Fresh Apple Cake with Praline Glaze

Fall is my absolute favorite season!  And I'm sorry to say, we get very little fall in Louisiana.  The temps tend to go from summer heat to cool fall and back to summer heat all in a span of 3-4 days.  So, it's a short-ish and inconsistent season; therefore, it must be relished! Fall = apples and pumpkins to me.  What about you?  Anyway, we've had a few days

Feta & Herb Grilled Eggplant with Savory Vinaigrette

Ah, eggplant! One of the quintessential summer vegetables, succulent and tender from the grill with just a drizzle of olive oil and a sprinkle of salt, but elevated to supreme status with herbs, feta, and a savory dressing.  That's a mouthful, yes?  And, a most delicious one, at that. Eggplant cooks lickety split on a hot grill - about 8-9 minutes.  While your s

The Best Banana Bread....ever....seriously

So, I wish I could take credit for this recipe, as it is the best ever, but I can't.  The brilliant chefs at Cook's Illustrated are responsible.  Why is it the best?  Well, if you like a banana bread that has intense banana flavor, a wonderful texture, and is relatively easy to make, it fits the bill. I mean, look at those deliciously caramelized slices of bananas?&

My favorite beef roast is brisket.  Specifically, bbq or smoked brisket.  The husband, however, isn't a big fan of bbq sauce or even bbq rubs.  So, we get around this by either eating at a local bbq restaurant where I order bbq brisket, or when I make it at home, I cut the brisket in half and roast one half the brisket in the onion with onions and garlic and the other us

Crawfish and Shrimp Étouffée with Bronzed Catfish

Happy New Year, everyone!  Sorry for the long absence, but I've been preoccupied with family issues.  But, I'm back! So, winter is officially here in south Louisiana, and with that, all of our wonderful, more heartier fare is on everyone's dinner table.  My husband is a picky eater, but he's always happy to eat most Cajun or Creole dishes, so I take advantage of this time o

Heavenly Hash aka Rocky Road Fudge…12 Weeks of Christmas Cookies & Sweets

One of my favorite Christmas treats used to be my mother-in-laws heavenly hash candy.  She used lots of marshmallows, which made it nice and gooey, not too many nuts, though.  Of course, I am the type of person who thinks nothing of adding an entire pound of pecans to a recipe that only calls for 2 cups, so my judgment may not be the best on whether something has not too many

Creole Pralines...12 Weeks of Christmas Cookies & Sweets

Can you believe Christmas is less than 3 weeks away?!?  Are you ready?  We're somewhat ready...we've had 3 bouts of strep throat since November, 2 of which were me, so when the mama is sick, things tend to fall behind, you know?  Anyway, while the gifts are ordered, none have arrived.  The husband and son have requested that we bake & decorate sugar cookies, but we'

Apple Crisp...12 Weeks of Christmas Cookies and Sweets

No cookies or fudge today, although I will have a new praline recipe for you next week!  Today's post is all about apples, specifically Jazz apples, my new favorite.  I know this sounds weird, but when you bite into this apple, you get an effervescent sensation - they are just wonderful!  I've been buying a dozen each week at the store, as Brett & Andrew are hooked on them, to

Milky Way Fudge...12 Weeks of Christmas Cookies and Sweets

Quick and easy fudge, my dear ones!  The day before Thanksgiving is supposedly one of the heaviest traveled days of the year, but it's also my busiest cooking day of the year!  I have been in the kitchen since 7 am, and thus far have made my mirliton casserole, cornbread dressing, cranberry-orange sauce, a roast for Friday, roasted cauliflower, and this fudge.  My dad can

Almond Espresso Brownies...12 Weeks of Christmas Cookies and Sweets

Brownies are one of my favorite chocolate treats, especially gooey brownies.  Since going gluten-free, I haven't had brownies...well, no, I have, but I haven't a good brownie, until now.  I will grant that you may not have almond meal in your pantry or freezer, but these are so good that you may just want to buy a bag.  Yes, somewhat expensive; however, I make my own with blanch

Louisiana Mirliton Casserole

Without doubt, every part of the United States celebrates Thanksgiving with a regional dish.  Here in south Louisiana, you can almost guarantee that a casserole made with mirlitons will be on the table.  Pronounced in New Orleans and surrounding parishes as "mel-a-tawn" you may also know it as a chayote. I remember my dad growing these on an old rose bush trellis - an extre
