The other day I happened to catch a facebook post from Dreena Burton offering a link to the recipe for her almond-roasted cauliflower from her cookbook, "Let Them Eat Vegan."I don't know why I don't already own the book, but I don't, so I quickly followed the link and made the dish for dinner. Minestrone | Gratitude

My husband made a big pot of minestrone soup loosely based on a recipe he found on the Forks Over Knives website. He made some substitutions like carrots and turnips instead of fennel and zucchini, kale instead of Swiss chard. He also added wine and herbs, and used GF pasta. Thanksgiving 2012

I just adopted a sweet dog

One more thing to be thankful for — we just adopted this sweet girl from Puget Sound Rescue. She's a lovely, quiet, gentle soul who is settling into her new home with grace and calm.
