my legs!! ouch!

I have been hitting the gym hard this week but this weekend takes the cake...we cancelled our skiing trip to go and help my parents pack up their house to move.  Hauling boxes and furniture up and down stairs at 9,000 ft. altitude has been kicking my rear!!  We are having a great time, though, and my girls have been terrific workers!

Quick Halloween Snacks

ROCK Star Snacks

To wrap up Little C's Rock unit in school we're having someROCK Stars!We had fun making these together and they are super simple! We started with a batch of no bake energy balls (recipe here) and formed them into various rock shapes, about 1" wide each. Easy Chicken Enchiladas

Last week Little C and I went to Nebraska where I was a guest cook at a Taste of Home Cooking School Show. The chef, Guy Klinzing, was extremely gracious and we had a marvelous time! Here we are whipping up some Easy Chicken Enchiladas. We even did a little singin' for St. Patty's Day...Also, openened my mail today and got a great surprise! Spaghetti & Meatball Pie

Looks like pie, tastes like lasagna, comes together in a snap! My kids LOVE this meatball pie and the mascarpone gives it a grown-up taste that I love.
