Fruit desserts are my favorite during spring and summer. There’s nothing quite like a decadent dessert full of fresh berries and citrus! Strawberry desserts could very well be my ultimate favorite. For National Coffee Cake Day today I wanted to combine the fruit dessert goodness with coffee cake. And the idea turned into one yummy cake!
We topped this coffee cake with whipped topping and it was delightful. I’m excited to make this cake more and more this spring and summer! I think dinner guests would really love it.
- 1 c. flour
- 3/4 c. sugar
- 2 tsp. baking powder
- 1 egg
- 1 tsp. vanilla
- 1/2 c. buttermilk
- 2 Tbsp butter, melted
- 2 c. strawberries, diced
- 1/4 c. flour

- 3 Tbsp cold butter, cut into pieces
