Matcha Pancakes with Pomegranate Acai Syrup

I made these really fun Matcha Pancakes with Pomegranate Acai Syrup for this month's Cooking with Astrology breakfast.

Ingredients

  • For the Pancakes
  • 2 Large organic eggs
  • 2 Cups unbleached all-purpose flour (I used whole-wheat pastry flour, so mine did not rise)
  • 2 Tablespoons sugar
  • 2 Teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 1/2 Cups buttermilk (I used coconut milk + 1 Tablespoon of vinegar)
  • 4 Tablespoons unsalted butter (melted)
  • 1 Tablespoon matcha tea powder
  • For the Syrup
  • 2 Cups pomegranate acai juice (I used Naked Juice, no-sugar added)
  • 1/2 cup pure maple syrup
  • 2 Tablespoons tapioca flour
  • 1 Tablespoon water
