Quinoa Potato Pancakes & Gluten Free Tips

I love potatoes and this recipe is one of my favorite ways to enjoy them at breakfast!

Ingredients

  • 1 pound potatoes, washed and shredded
  • 1 carrot, shredded
  • 1 cup cooked quinoa
  • ½ cup onion, chopped fine
  • 3 tablespoons nutritional yeast
  • 3 eggs or flax eggs
  • 1/3 cup gluten free flour blend OR all purpose flour
  • 1/3 cup gluten free breadcrumbs (I make mine from Udi's bread - see note)
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon fresh ground black pepper
  • 1 teaspoon sea salt
  • 1 T Coconut oil, for cooking
