Pumpkin spice mocha crinkle cookies combine the flavors of coffee and pumpkin spices in one simple, quick and delicious cookie recipe. A simple cookie batter is made from whisking a combination of flour, instant espresso powder, cocoa powder, pumpkin pie spice, baking soda, and salt into a wet mixture of sugars, melted butter and vanilla extract. After this dough is formed into equal-sized balls, they are rolled in granulated sugar and then baked to a chewy perfection in a hot oven. These pumpkin spice mocha crinkle cookies are perfect for the autumn season!

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 tablespoons instant espresso powder
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup light brown sugar
  • 1/3 cup granulated sugar + 1 cup granulated sugar for rolling cookies
  • 2 teaspoons vanilla extract
  • 6 tablespoons melted unsalted butter, cooled slightly
  • 1 large egg
