Baked eggs with creamed spinach is a fun way to enjoy breakfast or brunch! Beginning with the creamed spinach, fresh baby spinach is wilted in a hot skillet and then mixed with a combination of heavy cream, mustard and some essential seasonings and spices. These flavors meld together for just a few minutes until thickened and warm. Placed in single-serving ramekins, the creamed spinach is then topped with room temperature eggs and grated cheeses. Baked to a creamy and melty perfection in a 400 degree oven, these baked eggs with cream spinach will be on the breakfast table in under 20 minutes!

Ingredients

  • 6 cups fresh baby spinach
  • 2 tablespoons unsalted butter
  • 1/4 cup yellow onion, diced
  • 2 cloves of garlic, minced
  • 1/2 cup heavy cream
  • 1 tablespoon whole grain mustard
  • salt and black pepper
  • 8 room temperature eggs
  • 1/2 cup mozzarella cheese, grated
  • 1/4 cup parmesan cheese, grated
  • fresh thyme for garnish
  • homemade croutons or bread crumbs, for garnish
