Scrambled egg tacos with cotija cheese is the perfect healthy breakfast alternative.

Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • salt and black pepper
  • 1 tablespoon olive oil
  • 1 shallot, finely chopped
  • 1 jalapeno pepper, seeds and stem removed, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon fresh oregano, chopped
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground turmeric
  • 1 cup canned black beans, drained and rinsed
  • 8 corn tortillas, warmed slightly
  • 1 avocado, pitted, peeled and chopped
  • 3/4 cup cotija cheese
  • green onions, green part, sliced (for garnish)
