Gruyere Twice Baked Potatoes with Mushrooms, Onions and Bacon

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 10 ounces white button mushrooms, sliced
  • 1 medium-sized yellow onion, chopped
  • salt and black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 cup chicken broth
  • 3/4 cup gruyere cheese, grated
  • 1/2 cup sour cream
  • 2 tablespoons unsalted butter, softened to room temperature
  • 3 strips of bacon, cooked until crisp and crumbled
  • fresh parsley, chopped (for garnish)
