Watermelon Caprese with Balsamic Reduction

It might not be an obvious pairing, but watermelon and cheese is quite delicious. The juicy, grainy watermelon pairs well with salty, smooth mozzarella cheese. Traditionally, a caprese salad is made with tomato slices, but this recipe swaps tomatoes for watermelon for a fruity touch. But it still has the decadent mozzarella and fragrant basil. Then the salad is drizzled with extra virgin olive oil and a good-quality balsamic reduction. It's sweet and salty and savory all at once! This watermelon and mozzarella salad makes an awesome summer appetizer or side salad.

  • 8 ounces fresh watermelon, cut into 1/2 inch round slices
