I don’t know about you, but the last thing I want to think about on Thanksgiving is breakfast. I mean I have so much more to worry about, and breakfast is usually the furthest thing from my mind. Then there’s the whole idea of getting too full on breakfast to enjoy the actual turkey dinner. That being said, I still like to provide breakfast in some way, shape or form. I usually go the overnight baked french toast route. That way you can get it ready the night before, and then pop it in the oven the next day. Breakfast casseroles, like egg casseroles, are another big breakfast idea among many households that I know. This year I’ve decided to make my life even more simpler; and that’s why I knew that making a muffin or a scone was the only way to go. These scones are perfect and can be made in advance. Actually, I think they are ten times better the next day. They may be a little rustic, but they are packed full of the great flavors of bacon, pumpkin and chocolate. They are just small enough to not fill you up enitrely, but just big enough to hold you over. They are my go to this year, and I think they should be yours too!
