Chopped Salad with Garlic and Honey Vinaigrette

This chopped salad is a great way to use up all of those late Summer veggies. It is hearty, delicious and filling too!

Ingredients

  • 10 ounces romaine hearts, chopped
  • 5 ounces baby spinach
  • 2 large carrots, sliced thin
  • 3/4 cup corn kernels, roasted
  • 3/4 cup peas, frozen and thawed, heated through slightly
  • 1 cup cherry tomatoes, sliced in half
  • 1 cucumber, cut into half moons
  • 4 large eggs, hard-boiled and diced
  • 3/4 cup kalamata olives
  • 2 avocados, pitted and diced
  • 1/2 pound turkey breast, deli-style and sliced into 1 inch strips
  • 4 ounces gruyere cheese, shaved or diced
  • 1 cup croutons, store-bought or homemade
  • 1/4 cup white wine vinegar
  • 4 tablespoons honey
  • 1 shallot, diced
  • 1 head garlic, roasted
  • 1 teaspoon herbs de provence
  • salt
  • cracked black pepper
  • 1/2 cup extra virgin olive oil
