Chipotle, Mango Chicken Salad
Cooking and BeerThis basic chicken salad gets kicked up a notch with chipotle, mango and pomegranate!
Ingredients
- 1 lb boneless, skinless, fully cooked chicken breast, cubed
- 1 small yellow onion, finely diced
- 1 celery stalk, finely diced
- 1 small red bell pepper, finely diced
- 1 cup raw cashews, chopped
- 1/2 a mango, skins removed and chopped
- 1 chipotle pepper (in adobo sauce)
- 3 tablespoons pomegranate juice
- 1 tablespoon apple cider vinegar
- salt and pepper
- 3/4 cup mayo
- 2 tablespoons fresh cilantro, minced
- 1 tablespoon dried oregano
