Chipotle, Mango Chicken Salad

This basic chicken salad gets kicked up a notch with chipotle, mango and pomegranate!

Ingredients

  • 1 lb boneless, skinless, fully cooked chicken breast, cubed
  • 1 small yellow onion, finely diced
  • 1 celery stalk, finely diced
  • 1 small red bell pepper, finely diced
  • 1 cup raw cashews, chopped
  • 1/2 a mango, skins removed and chopped
  • 1 chipotle pepper (in adobo sauce)
  • 3 tablespoons pomegranate juice
  • 1 tablespoon apple cider vinegar
  • salt and pepper
  • 3/4 cup mayo
  • 2 tablespoons fresh cilantro, minced
  • 1 tablespoon dried oregano
