Grilled Marinated Flank Steak Salad

Salads don't have to be boring. They can be fun and delicious. Try this Grilled Marinated Flank Steak Salad with all of the trimmings! Enjoy!

Ingredients

  • 1 - 2 lb flank (or skirt) steak
  • 1/2 cup olive oil + 2 tablespoons
  • 1/4 cup soy sauce
  • 6 cloves of garlic, skins removed
  • salt and pepper
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon curry powder
  • 1 teaspoon onion powder
  • 1 lb goat cheese log, cold
  • 1/2 cup pine nuts + extra
  • 1/2 cup gluten free bread crumbs (store-bought or make your own)
  • 1/4 cup almond flour
  • 2 eggs, beaten
  • 6 ounces mixed greens
  • 2 cups cherry tomatoes
  • 2-4 eggs, hard-boiled, peeled and sliced
  • 1/2 cup quinoa, cooked according to manufacturer's instructions
  • dressing of your choice (olive oil and balsamic)
