Ingredients

  • 2 lbs. whole wheat rotelle (or whatever pasta you prefer)
  • 2 heads of broccoli (florets only)
  • olive oil
  • a pinch each of red pepper flake, dried parsley and dried basil
  • 6 cloves of garlic finely minced
  • about 16 oz. goat cheese
  • 1/3 cup heavy cream
  • 4 small tomatoes chopped
  • 2 cups of vegetable broth
  • zest and juice of 1 lemon
  • 1 bunch baby spinach
