pThis winter weather has got me seriously craving warming, comfort food. Stir-fries, my standby, low-calorie meals just don’t cut it in this weather. I dug out my copy of Michelle Bridges’ ‘Crunch time cookbook’ on the hunt for something to fix my cravings without contributing to the winter bulge. This lamb tagine hit the spot. […]/p

Ingredients

  • 650g (1.5 lb) lamb shoulder, trimmed and cut into cubes (I only used 600g)
  • 2 tsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 1 tbsp freshly grated ginger
  • 1½ tbs Moroccan seasoning (recipe below)
  • 400g (14oz)can diced tomatoes
  • 850g (2lb) sweet potato, peeled and cut into 2cm slices (I used 600g and carrot for the rest)
  • 1½ cups frozen peas
  • 1 lemon, juice only
  • 1 bunch of coriander, leaves only to serve (I left this out)
