These muffins make an amazing breakfast or a great afternoon snack. They are hearty, delicious and moist, they have the nutty crunch of the granola.
Made with quinoa, millet and brown rice flours, these muffins are very nutritious.
Healthy muffins are my favorite breakfast when I am in a hurry. Serve with Greek Yogurt and fresh berries, they keep me going during the day.
You can use store bought granola, but homemade is much healthier.

- ½ cup cane sugar
- 6 Tablespoons unsalted butter, melted
- ½ cup unsweetened apple sauce
- ½ cup Greek yogurt
- ½ cup quinoa flour
- ¼ cup millet flour
- ¼ cup brown rice flour
- ½ teaspoon sea salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup granola
- 2 apples, peeled, cored and diced
