Blueberry Buckwheat Granola Bars

Looking for a snack, granola bars are my favorite. These blueberry buckwheat granola bars are easy to make and definitely much healthier than the store-bought.

All the ingredients used in these buckwheat bars are what you can call Superfoods.

Buckwheat has many health benefits. It is not a wheat, it is actually gluten-free.

How to Sprout Buckwheat

Place 2/3 Cup of buckwheat groats into a bowl and cover it with 2- 3 5times as much room temperature water. Mix the seeds up so that none are floating on the top. Allow the seeds to soak for about an hour. You need to give them plenty of time to soak, but also remember that buckwheat groats can take in too much water which will keep them from sprouting.


  • 1 cup soft Medjool dates
  • ¾ cup orange juice
  • ¼ cup agave syrup
  • 1 teaspoon vanilla extract
  • 2 cups sprouted buckwheat
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • ½ cup raisins
  • 1 Tablespoon chia seed
  • 1 cup fresh blueberries
  • ½ cup coconut flakes
  • 2 teaspoon cinnamon
  • 1 apple, peeled and diced
