This is one of my favorite way to prepare eggplant. These crispy eggplant slices are crunchy. They make a great side dish.
You can serve them with a marinara sauce if you prefer, but I like to eat them plain.

- ½ cup mayonnaise or vegan mayonnaise
- 1 garlic clove, minced
- 12 slices unpeeled eggplant (about 1 pound)
- ½ cup italian breadcrumbs
- ½ cup grated fresh parmesan or (vegan cheese)
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
