OVEN-FRIED PARMESAN EGGPLANT

This is one of my favorite way to prepare eggplant. These crispy eggplant slices are crunchy. They make a great side dish.

You can serve them with a marinara sauce if you prefer, but I like to eat them plain.

Ingredients

  • ½ cup mayonnaise or vegan mayonnaise
  • 1 garlic clove, minced
  • 12 slices unpeeled eggplant (about 1 pound)
  • ½ cup italian breadcrumbs
  • ½ cup grated fresh parmesan or (vegan cheese)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
