This Easy Eats recipe, Chunky Chicken Salad makes a great healthy lunch or snack. Gluten Free and loaded with protein, it won't make YOU chunky!

Ingredients

  • 1 diced tomato
  • 1 diced hass avocado
  • 1 stalk of celery diced
  • 1 can of white meat chicken in water
  • small handful of bacon bits (optional)—I use uncured
  • ¼ - ⅓ c. of feta cheese—You can change this up and add other cheeses you like instead; parmesan, cheddar, etc.
  • ⅛ - ¼ c. of your favorite salad dressing—I used low fat caesar - you can use whatever you’d like; honey mustard, balsamic, Italian, low-fat, fat free, homemade. **Extras:
