Bacon & Cheese Power Greens Quiche

This Bacon & Cheese Power Greens Quiche is not as hard as you may think. In fact, it's pretty easy. A little prep goes a long way and the majority of the time is in the oven! You can impress your family, your friends or even yourself with your cooking prowess when you make this SIMPLE, TASTY and HEALTHY dish!

Ingredients

  • 1 Packaged raw pie crust
  • liquid oil to brush pie pan (I like Carrington Farms Liquid Coconut Cooking Oil —I find it at Wal-Mart for less)
  • About ⅓ c. Parmesan cheese (you can use sharp cheddar if you prefer)
  • 2 whole large/xlarge eggs (I buy cage free when I can)
  • 1¼ c. egg whites (I buy organic when I can)
  • A good sized dollop of yogurt
  • Ground Pepper to taste
  • Salt to taste - this is OPTIONAL since cheese usually adds plenty salt
  • 1 small bag or about 3-4 oz./2 c. of “power greens” (Some combo of spinach, chard and kale—You can make your own)
  • 1 pkg. real bacon bits (If you are a bacon lover and you want to make your own, go for it!)
  • ½ c. Sliced mushrooms
  • ¾ - 1 c. Shredded cheddar cheese (I like sharp)
