So we get to make other delights. This week it was from Tarla Dalal's 'Wraps'. I changed it to suit what was available at home. Her suggestion was to include Nachos chips and Lettuce (that I have left out). I thought the Salsa was perfect enough for the wraps and it was a HIT. Made a great Lunch Box Treat!!!br /br /uspan style="font-size: large;"Ingredients:/span/ubr /uibFor Corn & Cheese Balls:/b/i/ubr /Corn - 1 cupbr /Green Chillies - 1br /Cheese - 5 Tbsp, gratedbr /Butter - 2 Tbsp (use half butter and half oil)br /Maida - 2.5 Tbsp (use 3 Tbsp wheat flour)br /Milk - 3/4 cupbr /Salt to tastebr /breadcrumbsbr /Oil for deep fryingbr /br /uibFor the Salsa:/b/i/ubr /Oil - 2 tspbr /Green Chilli - 1, mincedbr /Onion - 1/2, chop finelybr /Tomato - 1, large, chop finelybr /Capsicum - 1/2, chop finelybr /Vinegar - 1/2 tspbr /Oregano, dry - 1/2 tspbr /Salt to tastebr /br /uibOther Ingredients for the Wraps:/b/i/ubr /Chapathi - 5br /br /uspan style="font-size: large;"Instructions:/span/ubr /uibTo make the Corn & Cheese Balls*:/b/i/ubr /Boil corn. Drain well.br /Take the chillies in a mixer jar and pulse until it is a coarse paste. Add corn kernels and pulse until coarse. A few whole kernels is Ok.br /Heat Butter in a deep pan and fry the flour in it. When it starts bubbling add in the milkall at once.br /Stir cook until thick and the mixture leaves the sides of the pan. uCool well./ubr /Tip in the corn and chilli along with cheese, salt to taste and 2 Tbsp breadcrumbs.br /Divide into 1" sized balls (about 16) and roll evenly.br /Take the breadcrumbs in a shallw plate and drop the cheese balls in it. Coat all over evenly.br /Heat oil in a deep pan and deep fry on a medium flame (in small batches) until golden.br /br /uibTo make the Salsa:/b/i/ubr /Heat oil in a deep pan, and saute chillies, onion and capsicum over a slow flame until the onion changes colour.br /Add tomatoes, vinegar, oregano and salt. Simmer for 4 minutes, stirring often.
