A few years ago I told you the story about the 30 day soup and how, every ramadan, I try to add to my repertoire of soup recipes. I know most of you will be thinking, you’re posting about soup! in the middle of the blistering heat of the UAE summer!
Well, after fasting for 15+ hours, soups and salads become a central part of my iftar menu. They are the best way to ease your stomach into eating . Added to that, if you have ever tried to fast for extended periods of time (be it a juice fast or a 5:2 fast or any form of intermittent fasting), you’d know that as the days pass by you start to crave healthy wholesome food, in smaller amounts as opposed to rich and indulgent desserts and meals. It is as if your body goes through a reset and that alters your cravings drastically. You start craving fruits, vegetables, simple soups and salads more frequently.
This roasted tomato soup is one of the new additions to my menu, it is my son’s favorite especially with the addition of some alphabet pasta Roasting the tomatoes, onions and garlic does wonders to the flavor of the soup, it makes it deeper, richer and takes a few simple ingredients to a whole new level. Roasted tomato soup
- 1 kg tomatoes
- 1 medium onion peeled and cut into quarters
- 1 head garlic cut in half horizontally
- 3-4 tablespoons olive oil
- 1 liter water or stock
- 1/3 cup parmesan cheese
