  • 1 cup quinoa
  • 1 teaspoon salt
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 600 grams pork, cut into small strips
  • 1 red onion, grated (or finely diced)
  • 1/4 cup tomato paste
  • 1 teaspoon ground oregano
  • 1 teaspoon salt
  • 1/4 cup water
  • 3 cups of cubed potato
  • 3 tablespoons minced parsley
  • 1/2 cup Parmesan cheese
