Ingredients

  • 2 tablespoons lukewarm water
  • 3/4 teaspoon instant yeast
  • 2 teaspoons sugar
  • 2 tablespoons molasses
  • 1/2 cup rye flour
  • 1/2 cup whole wheat flour
  • 1/4 cup wheat germ
  • 1 cup flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 14 tablespoons water, room temperature
  • about 1 - 1 1/4 cups additional flour for kneading
  • 1 egg white
  • 1/2 teaspoon evaporated milk (or regular milk)
