Strawberry oatmeal cookies
You guys all know I have a WEAKNESS for strawberries
Over the years, I have used them to make so MANY tasty treats.
There’s this Kit Kat and berry cake, which is just stunning!
And then, there’s this smooth and creamy seedless strawberry frosting.
And how can I even forget this delicious homemade strawberry jam?!
But God knows why, I haven’t shared these strawberry oatmeal cookies with all of you.
This recipe comes from my dear Mom, who makes these cookies A LOT during strawberry season.
They are fairly HEALTHY because they are made with oatmeal, whole wheat flour and coconut oil.
They are also SWEETENED with applesauce and brown sugar.
These cookies are slightly CRISPY on the outside and SOFT and CHEWY on the inside.
And trust me… you can taste the strawberries in every SINGLE bite!
These cookies are CHOCO-LICIOUS and packed with both, white chocolate chips as well as dark chocolate chips.
I also like to add some chopped up walnuts or pecans to make them a little NUTTY!
As you all know, strawberries are JUICY and tend to create a wet sticky MESS in baking.
My Mommy has a neat little TIP for preventing that.
The key is to first ROAST the strawberries for 25-30 minutes at 350 degrees.
That EVAPORATES some of the juices from the strawberries but it’s just ENOUGH that it won’t leave your strawberries dry or tasteless
To make these strawberry oatmeal cookies, you will need the following ingredients:
- 1/2 cup whole wheat flour
- 1/2 cup all purpose flour
- 1 cup oats
- 1/4 cup coconut oil
- 1/4 cup unsweetened applesauce
- 2/3 cup brown sugar
- 1/4 cup white chocolate chips
- 1/4 cup dark chocolate chips
- 3/4 cup diced strawberries (I cut each strawberry into 4 pieces)
- 1 egg
- 2 tbsp shredded coconut
- 2 tbsp chopped walnuts
- 1/2 tbsp vanilla extract
- 1 tsp baking soda
