Mangoes seem to be one of those fruits that people seem to be a little SCARED to use in their baking.
I am NOT exactly sure why coz I think it’s a WONDERFUL fruit with a delicious TROPICAL flavor.
I have seen people toss some dried mangoes on top of granolas, parfaits and oatmeals.
But, using the actual fruit in cakes, cupcakes, muffins appears to be very uncommon…WEIRD! :S
Well, I LOVE mangoes and I make this FAN-TABULOUS mango cake all the time.
I pair it with a LUSCIOUS mango frosting, toss some shredded white chocolate all over the cake…
