Vegan Pumpkin Black Bean and Lentil Chili

A rich and hearty vegetarian chili made with pumpkin puree, green salsa, sweet potato, red lentils, and black beans.

Ingredients

  • 2 tablespoons avocado or other flavorless oil
  • 1 medium onion, diced
  • 6 garlic cloves, minced
  • 2-3 tbsp. Chili powder, to taste
  • 1 tbsp. ground cumin
  • 1 quart vegetable broth
  • 2 cups red lentils, picked through and rinsed well
  • 1 large sweet potato, peeled and cut into ½" dice
  • 2 teaspoons salt, plus more to taste
