Ingredients

  • CAKE:
  • 2 cups white self raising flour (all purpose)
  • 1 teaspoon baking powder
  • 1½ teaspoons baking soda (if using all purpose flour)
  • ¾ cup natural sweetener or sugar of choice
  • 2 tablespoons (40g) softened light butter/coconut oil
  • ⅓ cup apple sauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup soured unsweetened vanilla almond milk (sour with 1 tablespoon lemon juice before baking)
  • 1 - 2 heaping tablespoon instant coffee (adjust to suit your tastes)
  • ⅓ cup (60g) semi sweet chocolate chips
  • CREAM:
  • 40g light ricotta
  • 150g low fat cream cheese, room temperature
  • ½ cup Icing Mix or a natural sweetener/sugar of choice
  • Chocolate dusting powder
